Salted Caramel Hot Chocolate Mousse Strawberry Short Cake


Some things make the evening sun feel brighter, the warm glow almost ingest-able. Tonight we had a clear sky and a sunset that melted away a little bit of the depression settling in over me. No, I don't want to live here forever... or even much longer... but I will say that consuming a nearly-perfect-for-the-first-try scrumptious cake with my husband then singing and playing with our daughter before bedtime was a perfect way to end a day. Amazingly, it didn't give me heartburn, even though I ate half of it and no dinner. Pregnancy...

The short cake recipe I got from CupcakeProject.com - it's just her vanilla cupcake recipe.

The Salted Caramel Hot Chocolate Mousse, well I started out with a recipe but said "to heck with it" and just winged it. I would definitely do something different next time, but this was pretty good for the first time =)

Basically I just kept mixing ingredients together til it came to be what I was looking for. It was 8 oz. mascarpone, 4 oz. cream cheese, about a cup to a cup and a half of heavy whipping cream, and 1/4 cup (or so) of Salted Caramel Hot Chocolate powder from our local grocery store. It's what I had on hand. And it turned out delightful!
